I mis-quoted Savanananananana (sounds like a motorcycle starting up) last night. It's "The LB in the BZ" as in 'Little buddy in the back zone'. Now that we're clear on that she's handing out nicknames but some started their own!
When I walked in I was called "Scottzilla", by Josh.
"Kota"calls me "Scotty" (I think 'Coda' since I'm a musician)
Sav calls me "LB"
Kristen said I was acting broken today. Yep I was. After a night like tonight it's easy to be broke.
I was talking with Cesar about insanity... We're thinking it's a loop. We're crazy then we add more craziness until it loops into sanity. Mobius Strip.

It was a circus, thus this linked youtube vid :D It felt like I worked very hard with very little to show for it. Anything I stocked went bye-bye soon afterwards and servers were all over the place making mobility a challenge. I'm sure other kitchen staff doesn't envy my position... it gets cozy up there!

What does a sassy redhead, a teasing Ukrainian (if I remember right), a new party balloon lady, a lady who's always asked "North or South?", a smart-ass guy (you know who you are!), a studly guy (not on my friends list), a jolly guy, a Caribbean guy, and more people, salads, bread, ice cream, and a steady stream of tickets have in common?
I don't know but I work with them. It was a fairly steady night at work with a bunch of small tops.

I often write in run-on sentences...
I was pretty busy with the spag position since I had a lot to do so I could keep the line cooks happy but it was kind of hard to tell if they were happy or not because I'm pretty much alone in the back of the kitchen portioning and cooking noodles while the kitchen manager was running around making sure everything was running smooth but things tend to get slippery in the kitchen so you got to be careful or you could end up with stitches like I did which is very inconvenient but tonight I didn't slip so I could keep working which can be lonely in the spag position except I had some very lovely visitors that brightened up my night and made me feel young again and I needed that boost to finish my shift that included a hug which I like very much and would I would highly recommend hugs if they don't cause too much anxiety but most of my coworkers are pretty awesome and I bought a bluetooth speaker so I could listen to some tunes which kept me boppin' and rollin' throughout the night except I don't roll very well.
Summary: Slow night. I kept busy. Music. Great coworkers. Hugs. Did I mention I like hugs?

I don't know how much I slept last night. It seems like I was awake all night but I know I slept a few times. On top of that I'm getting over a cold! So my Friday night at work was a bit of a wrestling match between me & tiredness. I was distracted by my coworkers too. I spent a lot of time talking and hanging out when I'm usually busy with the job. It was fairly busy but there was plenty of time for some socialization.
Socialization? ERMERGERD! (yeah I know I'm using an antiquated meme/joke but... bite me) Maybe I'm underestimating my social skills. Maybe not. Maybe I don't care about my awkwardness when I'm tired. Maybe tiredness didn't factor in. A lifetime of habits of underestimating myself is a hard habit to break! Does it matter if I underestimate myself? I think it keeps things real and humble. I'll still perform the same however I may perform. Maybe. It's all relative. I'm aware of my strengths and weaknesses. Well... maybe I have strengths and weaknesses that are hiding in plain sight. For that I'll have to rely on other people's perspectives. But the nature of perspective is in the interpretation of information. Do I make up my own mind or rely on the views of another? Both? Ramble on! Improvise! Just enjoy it.
If you can untangle that last paragraph then I'll congratulate you.

...the crew contends with another 30+ reservation, and then some, around 8:00. It went smoother tonight although everyone's brain seems to have been hijacked for some alien experimentation. Hopefully we'll get them back. We'd often go somewhere to do something but forget what we were doing including yours truly (yours truly? What does that really mean?). A lot of us were tired too. Me? Because of a hamster in my head with ADHD and too much sugar.

I really want to record some of the sounds my coworkers make and make a mix tape. "UGH!" "GROWL!" "AUGH!" "*censored expletives*". There's been a lot of singing too with strange made up lyrics and all. I'm grateful someone wasn't singing Christmas music like last night... "GROAN!"

I ended up getting 8 stitches that night. The company manager was there too.

Dishwasher memes & tips

If you work as a cook at a restaurant, you might have started as a dishwasher (DW). We lovingly call it the "Dish Pit". The dish area is a black hole for unorganized madness. Dishwashers are the masters of organization, when done right! Everyone else... well... they test the DW's patience.

It's intimidating to find haphazardly organized dishes all over the place in the dish pit. Sometimes the DW's will leave those messes alone until someone else, who's brave enough, comes along and organizes it for him/her!
Who wants to deal with something like this?:
When it's busy and we're short staffed, things can get really ugly. I often find the dish pit like this. Not fun!

I'm a very patient person and working the dish pit really tests my anger management skills. I get really angry when things get like this, so that's when I start being more aggressive and tackle the task like a mean, old grump. I don't lash out on anyone so I get really quiet and ignore people. I tend to take things out on inanimate objects.

Sometimes the DW's let things build up, so someone else in the kitchen has to pick up the slack. I get it. It's tiring since you're going ALL THE TIME. There's no shortage of dirty dishes... but EVERYONE RELIES ON THE DISHWASHER! EVERYONE! So...
  • Aside from actually cleaning the dishes, the DW's main duty is to make sure EVERYONE IS STOCKED! Yeah, you may have stacks of clean dishes in the pit but they're not doing anyone any good to leave them there. 
  • Organize and prioritize. It's easier to keep the same type of dishes together, so unloading the dishwashing machine is faster and easier.
  • While the machine is going, don't just stand there! There are other dishes to be manually scrubbed.
  • Clean the area as you go. You're the last person, aside from management, who's left in the restaurant. Cleaning now means less cleaning later! This means you could possibly get out earlier.

I probably have more tips but that's a start.

The DW position is the least respected BUT the most appreciated position in the restaurant. Those employees who can keep up with the demand gets the most recognition *tips hat to those DWs with that unenviable task*...
...but don't forget the pantry guy, huh? I mean I put up with servers all the time, the kitchen staff actively avoids being in the servers' path, while I keep things running up front? HUH? Oops, I digress... Don't mind the hostility... HUH?!?!? I'm kidding. Maybe... 😏

Restaurant cook memes

Pantry is technically a kitchen position, but it doesn't really cook anything aside from bread. That's where the line cooks come in.
  • It's always hot on the line.
  • They're always waiting for something. More sauce. More noodles. More plates. More orders.
  • There's a bit of hostility between cooks and servers. Sometimes either side gets something wrong. Deal with it! In the pantry position, I get both sides of complaints from both parties. I try my best to ease tensions (since I have to deal with both), and pantry gives me the unique opportunity to improve morale for both sides.
  • They don't like working the pantry position. It gets crowded up front and servers will often do their own thing while getting in the way. I'm used to it. I see relief on the line cooks' faces when I come on. Glad to help!
  • They yell the loudest. "FOOD RUNNERS!"
  • They are probably the most sanitary workers in existence... hopefully.
  • They have great memories... remember the time?... Nah. Recipes.
  • They have short fuses. Understandable since most of the restaurant relies on them.
  • They keep their heads on when it's busy. Most of the time. Tempers flare up especially when food get backed up.
It takes a special kind of person to be a line cook. You need a good memory, good sense of priorities, consistent work flow, and a lot of patience. They also rely on a lot of people to keep things going like dishes, ingredients, clarity of orders, and prepped food. This is where everything starts. Line cooks rock!

I know the feeling as a pantry cook, but prep for the line cooks are very extensive.

Restaurant server memes

 Technically pantry is a kitchen position, but I'm around servers all the time. I do not envy servers.
  • Balances heavy trays of food and drink, with occasional mishaps. Sometimes I clean up after them since they have to serve their guests. Shit happens.
  • Often cuts in line to do their salad orders. That's fine... 😣 Understandable though. Those servers who do help me out in pantry are greatly appreciated.
  • Sometimes I'm a crossover employee. I sometimes pick up their slack. I'm told it's not my job but when they're behind, and I'm not, I can help out.
  • Sometimes ignores the bread oven timer. Can be irritating. That's okay because the servers know my job too. Fine. Finish your order so I can get the bread 😝
  • Sometimes they take the bread out of the oven without putting in a new tray. Do you want another 10 minute wait on bread during dinner rush? Do ya? Hmmm?
  • It gets rather intimate at times on the front end. Proper hygiene is a must. Beware of my boney elbows though since they're lethal. The front end is a very narrow corridor and people need to get from one side to the other. I need to stock things.
  • Servers have to deal with rude guests. I've had my share of customer and guests at other jobs. I do what I can, in classic introvert style, to lower stress levels. Humor and appreciation.
  • Often servers will need to revise orders after they ring it in. They have a lot going on and... well... shit happens. 
  • I'm the odd duck 🦆in a pond of servers. The ones I work with have great personalities! If their attitude was negative all the time, I'm sure I wouldn't have lasted as long as I have, so thank you!

Restaurant manager memes

It's not easy being a manager... trying to juggle employee satisfaction with costs.

  • We need to keep 9% labor in the kitchen!
  • Food costs! Less carryover!
  • Stable work schedule? Are you nuts? 
  • Who's gonna clean up the vomit in the bathroom?

  • Gotta show corporate around... *sigh*

*I was the closing manager at a small mom & pop store. I only managed one other person a night. I did not have to deal with all of the above so I salute all the managers I'm working with now! You're freakin' gold!
